Josep i Pau ‘Chaos’ Brut Nature Mètode Traditional (2018)

This is one of Vinestock's two sparklings from Josep Rosell-Mir, a 18th generation winemaker whose family's land has been cultivating grapes in Catalonia for over 6 centuries. "Nestled in the foothills halfway between the Mediterranean Seas' Serra d'Ordal and the Parc Natural de la Muntanya de Montserrat," Josep (now in his late 70s) along with his lifelong friend Xavi and two French winemakers, Nico and Cristophe, are creating beautiful sparkling wines, without filtration, allowing the full flavors of the family's lineage to shine through these deliciously fresh bubbles. 

85% Macabeu and 15% Parellada, Chaos is a joy to drink, bright yet full bodied, the flavors come full circle with each sip. The natural fermentation makes drinking this wine feel like your standing within the rows of vines it was born from. It's wild and alive and perfect for summer.
